Sweet Chilli Chicken

Sweet Chilli Chicken, this recipe is simple, delicious and kids favorite. I used Thai sweet chilli sauce, it has sweet , sticky, slightly spicy, beatiful orange-color sauce goes well with chicken. I love its colour, texture and favour,  I guarantee you all will love this dish.

Ingredients

  • 500 g skinless boneless chicken breast/thigh, cut into small pieces
  • oil, for deep-frying
  • 1 tbsp oil
  • 2 cloves garlic, minced
  • 4 tbsp bottled Thai sweet chili sauce
  • 1 tbsp smoked paprika powder
  • 1 tsp lime juice
  • salt to taste
  • 2 tbsp chopped cilantro leaves

Frying Batter

  • 1 egg white
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • 1/2 cup water, ice cold
  • 1 tbsp cooking oil
  • salt to taste

Method

  1. Take all the ingredients for the Batter in a bowl, mix and combine well. Add the chicken into the batter.
  2. Heat up a wok with about two inches of oil. As soon as the oil is fully heated, deep-fry the chicken until golden brown. Transfer the chicken to paper towels to absorb the excess oil.
  3. Heat 1 tbsp of oil in a pan at medium flame. Add garlic and stir-fry the until aromatic. Transfer the fried chicken into the wok, follow by the sweet chili sauce, smoked paprika powder, lime juice and salt. Stir to coat the chicken well with the sweet chili sauce.
  4. Dish out, garnish with cilantro leave. Serve immediately.
